Black-eye peas, tomato, and parsley salad

A coworker of mine made this and brought it to work last week. I made it today with freshly-picked cherry tomatoes (Thanks, Mom!) and it is SO freaking good! Not bad on the calories either. Yum.

Sounds great!
I'll have to give this a try with sodium free or dried peas and maybe cut back on the olive oil a bit.
Being Southern, I adore black eyed peas and this is a great alternative to traditional black eyed peas and cornbread!

I'm making it again soon and I'm going to use dried black-eyed peas too. The grocery store I went to had low-sodium versions of all the other canned beans, but not those and WOW on the sodium.0
