Vegetarian Lasagna

My husband has lost 46 lbs while over in Iraq and I have lost 26 while he's been gone and I was wondering if anyone had any good tasting, vegetarian, low fat lasagna recipes? I know it's a stretch to use good tasting, lowfat and lasagna in the same sentence but I am hoping to find one to make when he comes home... thanks in advance.

you can sub low fat cottage cheese for the ricotta, and you can use low or no fat cheese for the top. It will b reduced, but almost no matter what you do, since there is pasta and cheese in it, it will be on the higher calorie side...0

Vegetarian? Does that mean no dairy in addition to no meat?0

Vegetarian typically means dairy (and often, eggs) is still ok. Vegan is no animal products at all.0

This is one of my favorite"fall" recipes... though I must admit, I use a bit more parmesan cheese.

Here is a list of them with pics...you can sub out some of the pasta for strips of eggplant and zuchinni. Use low fat ricotta, etc.0 -
I've had some veggie lasagna that used zucchini strips instead of pasta and it was delicious!
My daughter's grandparents, who we visit often in Wisconsin are vegetarians, so we get to try a lot of interesting (and GOOD) dishes.0
