HI. Im not sure how else to describe how I feel except "off"

Im in week 3, have been sticking to my calories, logging everything, regular excercise, low carbs/sugar (diabetic), lots of veggies and lean meats. tons of water, ive cut out sodas, only have a small cup of black coffee or with a little almond milk once in a while.

I've lost 5.5 lbs and a some inches... and my blood sugars have been in acceptable ranges and much better than before ... so im happy with my progress/results, and I feel good about my food choices. In the past 2 weeks ive had 3 "rest days" off from exercise to give my body a little recovery time. I feel like I'm doing things right?

But this week I feel LOUSY. The past 2 weeks Ive had some adjusting but I still felt pretty good. This week - I am hungry (or at least I think I am, lol) between meals/snacks even though im eating the same calories per meal that i had last week. I am feeling really tired/drained and run down even though Im resting well. Like I have NO ENERGY. It's not "my time of the month" creeping up on me, i had a health-necessity hysterectomy 2 years ago, so i no longer have periods.

Is it normal to have a bit of a slump a few weeks in? I dont feel ILL ... i just feel run down.

Is it possible that my body is still adjusting to the different food/choices (i used to eat a LOT of carbs/sweets before the diabetes diagnosis gave me a wake up a call). Should I be taking some sort of vitamins maybe?

Just not sure what is up with me this week - but really need it to fix itself!
