Needs some help - Bedrest and weight loss

Just back from vacation and I have been put on total bedrest for fibro and chostrochondritis. I gained all my weight back on vacation. I am trying to not let it get me down since I am sure some of it is salt/water weight. I am going to up my water for the next week.
I need to get some input on the bedrest. I am at 1200calories for my weight loss. Usually I am under and don't eat enough. I find the boredom of sitting is causing me to pick a lot at foods, not eating great meals. My exercise for the day will consist of making a dinner (just the moving around in the kitchen - limited to 30 minute prep), one 20 minute set of cleaning minus any stairs - I may do one set though to get the wash at least organized each day, and one shower per day, and bathroom breaks.
This will last for at least 2 weeks, but may be up to 2 months depending on how I heal.
So I need some great ideas. If you have been here, any suggestions would be great. I need ideas for 30 minute prep (I love my crockpot, today I have a spicy beef with onion/peppers in it that will be served over brown rice).
