How to prep quinoa and beans beforehand ?

So I wanted to do a meal prep but was unsure if my items would stay good for a couple of days in the fridge.
I was planning on..

-quinoa
-soaked dried beans and cooked after (kidney,black,chickpea)
-tofu stir fried
-frozen mixed vegetables or frozen corn stir fried
-hummus

Now I know that the hummus should be added on when I am ready to eat, but what about the rest of the stuff? If I make this batch then is it okay for 3 days? I want to have this in ziplock containers ready to eat but I also don't want anything to spoil.

    I've made quinoa ahead of time and kept it in the fridge to take with my lunches for the week. I usually only make enough for 2-3 days at a time but I haven't had any issues with storing it it the fridge for a few days once it was cooked.

    We bulk cook a dish that's black beans (rinsed and drained), quinoa, brown rice and lean beef and it stays good for 7-8 days. Lasts me through my heavy shift rotations.

    So I can go ahead and mix the beans and quinoa and veggies and it should be fine for a couple of days?
