Egg white and greens frittata
Good super tasty high protein vegetarian dish (if you don't mind eggs).
If you want to drop the calories of this meal a bit, halve the feta or use a low fat variety.
(4 serves of vegetables, 30 grams of protein and only 250 calories per serve!)
Ingredients:
18 eggs (15 whites, 3 whole)
1 head of broccoli (cut into small peices)
1 medium zucchini (diced)
1 leek (finely sliced)
60g of baby spinach
A cup of spring onions (green onions or scallions) (finely sliced)
1 cup flat leaf parsley (coarsely sliced)
100g Dodoni feta (I like the full fat flavour, but can be substituted for low fat) (crumbled)
Method:
Fry the leek in a pan with a little extra virgin olive oil.
Arrange all other vegetables in a baking dish then add leek.
Pour over egg whites and gently mix through vegetables.
Sprinkle feta over top.
Whisk and then pour over 3 whole eggs
Bake at 180 for 30 min, then remove from oven and use a spatula to pre cut into 4 sections. (This will help with defining the edges for ease of serving later)
Return the oven and cook for another 10 min.
Cooking time can vary so keep an eye on it!
Other things I have thought about adding: cherry tomatoes, sliced mushrooms, chillies, anything really!
