I am aiming for 600 calorie dinners at home and I am wondering what size servings I can do. I am so used to eating prepared foods with the calorie counts attached at the dining hall I am not sure what 600 calories is for myself! Generally, how many ounces of chicken/fish/beef/pork can I eat if I plan on having something like 1/2 cup of brown rice and about 1 cup to 1.5 cups of sautéed veggies?

    I'll play!

A cheeseburger made with 4 oz. ground chuck (80/20) and a slice of American on a bun, plenty of condiments, tomato, pickle, lettuce, and a spinach (and other vegetables) salad dressed with a bit of olive oil and balsamic vinegar comes in just under 600 calories.

Edit: Just looked back at my diary for a couple of 600 calorie (or less) meals. Most notable: 2 slices of a 12 inch pizza and a couple of cups of Caesar salad (all homemade and all ingredients weighed carefully); gnocchi with chicken, green beans and mushrooms in garlic butter sauce.

Check out eatingwell.com; they have a ton of ideas and they're categorized ("500 calorie meals" etc.)
