Carbs and Fiber

I've custom-set my goals as far as percentages and have noticed that I daily go over my carb intake by exactly or right around my fiber intake. I love the settings because my current intake combination satiates me and keeps me feeling full and happy all day.
Does this mean I'm right on target as far as my carbs, as I've read that carbs minus fiber = actual carb intake?

Yes I think you are right.
Fiber both soluble and insoluble fiber are undigested. They are therefore not absorbed into the bloodstream. Instead of being used for energy, fiber is excreted from our bodies. Soluble fiber forms a gel when mixed with liquid, while insoluble fiber does not. Insoluble fiber passes through our intestines largely intact.0
