Is water retention weight caused by sodium intake 'real' weight gain? And is there a limit on how much excess water weight your body can hold? I would think at some point if your sodium intake leveled off then so would your body's water weight.

No, water retention from sodium is temporary. Usually last a couple days or so. I'm not sure what the limit of excess water is, but don't be surprised if you carry 2-5 lbs of it after a high sodium day.0
