Banana Berry Oatmeal Muffins

This is low calorie, and can really be altered a lot to make all different kinds of muffins :)

1.5 cups blended flour (I used unbleached with wheat bran, nutri blend by Robin Hood)
1.5 cups Quaker Quickoats
1/2 cup brown sugar, lightly packed
1 tsp baking soda
1 tsp baking powder
100 grams oikos peach mango greek yogurt (can use other flavours/brands)
1 banana
Raspberries - 130 grams
Blueberies - 95 grams
Strawberries - 240 grams

Directions:
Preheat oven to 375 Fahrenheit.
Combine all dry ingredients in a large bowl. I combined the oatmeal in a separate bowl with the yogurt, but you don't have to do this, I usually do to let the oats get softer. In another large bowl, combine any fruit you're using, and mash together or blend (I mashed it for a thicker consistency).
Combine all wet and dry ingredients into large bowl. If the consistency seems really dry, add half a cup of unsweetened applesauce.

Pour into muffin tray, fill 3/4. Bake approximately 15-18 mins. I'd start checking it around 12 as ovens vary.

**The original recipe had eggs, butter, and vegetable oil but I replaced them with an individual greek yogurt cup (100grams), I used Oikos peach mango, you could use any though. Because of all the fruit, I found that the consistency was good and not too dry. If you alter this recipe or don't have as much fruit, you can use more yogurt, or you could use unsweetened applesauce instead for a vegan alternative, but if you want to use eggs/ butter etc, that's fine too! I've used both yogurt and applesauce before together and it turned out fine, this time I only needed the yogurt.

I love this recipe because it can be altered in so many ways, using different fruits, or taking out the fruit and using chocolate chips, nuts etc.

Because of all the berries mine came out a purply-grey colour, but they're really tasty. They're pretty dense, and make a great on the go breakfast.
