My kids and I shreded them with a mandolin into boiling water for about 5 minutes. Spread on a cookie baking sheet with Pam and salt and pepper (I added onions to mine.) So yummy.0

Ooh, so many things you can do!
-Oven fries - drizzle with a little olive oil, toss, load 'em up on your favorite spices (my faves are garlic powder, dried basil, and paprika), and bake at 400 until done, flipping them every so often. (takes maybe 20 minutes I would say)
-Bake them! The microwave is faster, but the oven is just as good. Then top with salsa and cottage cheese, or chili, or cottage cheese and spices. (I'm big on spices, haha...)
-Make some potato soup. Here is a good recipe from Web MD: http://www.webmd.com/food-recipes/baked-potato-soup?ecd=wnl_hlc_100710
-Use them in a simple chicken noodle or vegetable soup. (Msg me if you want a super easy recipe!)0 -
