Where to keep fat free sponge?

Hi
I found this recipe for a fat free sponge, http://www.bbcgoodfood.com/recipes/1943636/quick-fat-free-sponge, think its the same recipe for as for a swiss roll sponge.
If I just have the sponge and not the cream or jam how should I store it? In the fridge or in an airtight container? Will it go dry fairly quickly as it has no fat?
Also could I use a sweetener such as splenda instead of caster sugar?
