Easy Spring/Summer Recipes

Now that the weather is getting warmer, I'm transitioning back to my spring/summer style of cooking & eating. More cold dishes and grilled meats! Here's a very simple, fresh & tasty "recipe" that I use quite often this time of year:
I call it "Picnic Salad".
1 cucumber, peeled and sliced or diced
1 tomato, diced
1 green bell pepper, diced
1 yellow onion, diced
Salt & Pepper to taste
Mix all veggies together in a bowl and add salt & pepper. Put in refrigerator for 20-30 minutes. Mix well before serving.
That's it! So simple. The veggies release some water creating a bit of their own "dressing" with the salt & pepper.
