Healthy Recipes for Picky Eaters?

I need some help. I really want our family to eat better, healthier, and cleaner. The problem is, my husband is EXTREMELY picky! He is strictly "meat and potatoes" and nothing else. The only green vegetable he eats is green beans and that's pretty much it. I know I can't make him eat different, but I would love for us to eat healthier. Any ideas??

Your husband sounds a lot like my boyfriend. Easiest swaps for us were to do turkey burgers instead of beef all the time, investing the money in buying higher quality food (farmer's marker, lower-fat meats), and adding more pork into our routine because holy carp, low calories!
I also started trying new recipes, and my boyfriend (who was addicted to fried french fries) loves my baked sweet potato fries, will eat asparagus if it's roasted, and now eats spinach salads voluntarily. At our local farmer's market, people sell it for $2 a bag and it's so much different than what you get in stores.0 -
Grind some veggies and put them in meatloaf. Try zucchini bread, carrot muffins, pumpkin muffins. Will he eat tomato sauce? Grind veggies and mix them in the sauce. Grind mushrooms, onions and garlic into beef gravy for potatoes. Make twice baked potatoes with cooked chopped cauliflower blended in with bacon and cheese. Sweet potato French fries. Macaroni and cheese with corn and carrots stirred in. Just cook healthy, if he wants different, he can cook it.0

I'm the same way - super picky and don't really like any vegetables. I try and eat a lot of fruits. I will eat chicken/pork/beef/turkey/ham for my main part of the meal, then eat fruit as my side. I agree with one of the other posters saying to eat turkey burgers instead of beef. I also use ground turkey when making tacos or spaghetti instead of ground beef. You're lucky he eats green beans because I haven't even made it that far yet :-P0

is it possible to switch out the meat for some well-marinated oily fish (salmon, tuna, mackerel)?
also, is there are key ingredient (like chili or some other flavour) that they really like? That might be transferable to a healthier dish. Also, things like cauliflower mash instead of potatoes could work, the taste is essentially the same. Also, if you blend in some garlic and onion, you can get more flavours. It's possible to skip over a lot of creamy components without fuss.
Healthier versions of normal dishes can also pass under the radar. Using less oil, baking, steaming or poaching rather than frying... also, secret power ingredient, Kewpie Deep-Roasted Salad Dressing. I don't know what kind of crack they've got up in there, but when it's on (just a tablespoon will do, though I nearly swilled down the whole first bottle) I chase my broccoli around the plate.0 -
