Daily intake & mental+physical health

Ok I have a question; I am sure I don't meet my recommended daily intake for most vitamins and minerals every day - there's so many different ones that it's difficult to get them all without paying attention.

Don't get me wrong, I do try to live healthy; I eat a good amount of fruits and vegetables, but I've been doing some research into this and I am finding that there may be some vitamins and minerals that are lacking in my diet. So what I'm doing now is incorporating some new foods in my diet that help me meet my daily values - now I eat more spinach, broccoli, fish, all kinds of nuts, etc. Other foods will be included as I learn more.

What would happen to my mental and physical health if I were to design a diet that makes sure I get enough of everything. Would I get more energetic? Would my ability to focus increase? I think it's logical that these would improve, but I'm interested in hearing your experiences. Has anybody been experimenting with this?
