Help to create my recipes

Hi All,
I had question about logging food I made and got great suggestion to make my own recipes and it really helped a lot. Now I am creating new recipes almost everyday. However, there are a few problems I ran into and hope I can find some help here.
1, there are some ingredients I can find in the food database but when I try to put in my recipes, they just won't show up. For example, I am going to use " Pat Chun" ( brand name) sweetened vinegar sauce in my cooking. I can find a lot of them in the database but when I try to add it into my recipe, it was no where to be found. What should I do?
2. it gets confusing when there are so many different choices for one ingredient. Like I am searching for raw pork hock, I got a lot cooked ones. Even the ones says that's raw I have my doubt because it was with so much calories and lots sodium..... Has anyone experience anything like this?
