Chili Ginger Cauliflower with Peanut Chicken
Y'all I just made a great low-cal dinner so I thought I would share the recipe - chili ginger cauliflower hash with peanut chicken!
12oz fresh cauliflower
1tbsp olive oil 1tsp chili powder
1tsp fresh chopped ginger (powdered is also ok)
7oz cubed chicken breast
1/4 small lime
1 tbsp lightly chopped cilantro
2 tbsp trader joe's satay peanut sauce
Simply sautee chopped cauliflower in olive oil, chili powder, and ginger. Add salt to taste. Season chicken with salt and pepper and add to lightly oiled or non-stick pan. When chicken is fully cooked, remove from heat and add satay sauce. Toss lightly. In a bowl, top cauliflower with chicken. Squeeze lime on top and sprinkle with cilantro. Enjoy! (477 calories, not including any calories from spices or the lime)
