Beef and beet greens stew

I bought a bunch of fresh beets this week. Since I'm not a huge fan of sauteed greens (kale, chard, etc), I made up this recipe as a way to use up the beet greens. It turned out way better than I could have possibly imagined. This stew is absolutely delicious, as well as high in iron and a good source of calcium. I hope you enjoy it!

15 ml olive oil
2 onions, diced
1 carrot, sliced
1 large rib celery, sliced
250 grams beef blade roast, fat removed, sliced
125 grams cooked navy beans
1 bunch beet greens and stems, thinly sliced (about 250 grams)
1 litre chicken broth
1 bay leaf
60 ml tomato paste
5 ml kosher salt
5 ml dried thyme

Saute onion, carrot, and celery in olive oil over medium heat. Stir in meat and cook through. Add all remaining ingredients, bring to a boil, then lower heat and simmer approx 30 minutes. Remove bay leaf.
