red cabbage recipes?

Any good recipes that utilize red cabbage? I bought some for a Thai quinoa stir fry but it seems I have a bit of red cabbage left over. Any healthy vegetarian recipes? Thanks : )

I like to make coleslaw out of it with some fennel. Very good on veggie burgers and sandwiches.

Finely chop your cabbage, grate some raw beetroot and finely chop some red onion. Toss it with equal amounts lemon juice and olive oil and toss through some danish feta and pumpkin seeds. One of my fav salads!
