I made this last night and it was spectacular!
(I didn't have mayo so I used tahini, super yum, highly recommended!
Topped with edamame and sliced bell pepper, came out to ~150 cals per serving)
Napa Siracha Slaw
makes 6 servings
you will need:
1/2 head Napa cabbage, shredded (about 4 cups)
3 large carrots, shredded (about 2 cups)
3 tbsp vegan mayo
2 tbsp liquid sweetener (honey, agave or pure maple syrup)
1 tbsp apple cider vinegar
2-4 tsp siracha or to your taste
2 tsp sesame seeds
Kosher salt to taste
assembly:
In a large mixing bowl whisk together vegan mayo, sweetener, apple cider vinegar & siracha. Add shredded cabbage and carrots and toss until shredded veggies are well coated, Season with salt and sesame seeds and toss well- add additional sesame seeds to top of slaw prior to serving if desired.
Chill for a few hours prior to serving or serve right away.
Enjoy!
