I love cooking and have eaten mostly vegetarian for the last twenty years, so I'm no stranger to substituting ingredients in recipes. Also, I'm a freelance writer and I have to do a ton of articles on food substitutions for health/weight loss and I'm running out of ideas. Wondering if the MFP community has any genius low calorie or health conscious recipe subs I haven't discovered yet. If so, please share!

Here are some of my favorites:

Coconut milk for heavy cream in soups
Mashed cauliflower instead of mashed potatoes
3/4 zucchini 1/4 potato for hash browns

    blended frozen cauliflower as icecream

    cauliflower fries with a cauliflower sauce as poutine

    cauliflower with brown food colouring as chocolate

    fried cauliflower as bacon

    cauliflower with a mushed banana as pancakes

    juiced cauliflower as soda

    GREEK YOGURT.

    Greek yogurt instead of part of mayo in chicken salad/egg salad/tuna salad/whatever salad.
    Greek yogurt instead of milk and butter in macaroni and cheese (or basically anything requiring milk and butter.)
    Frozen greek yogurt instead of ice cream... not really a cooking substitution but useful nonetheless.

    And protein powder in place of at least some of the flour in most things as well.

    Lots of substitutions you can make in baking such as applesauce to replace half the butter or oil in a recipe
