tomato recipe

anyone got a fairly easy recipe that uses a lot of tomatos?
because i have about 2kg of tomatoes and i want to use most of them before they go off
the only thing i can really think of is making like tomato soup or tomato pasta sauce but am sure that will yield more than i can eat coz i am but one person lol (though my sister is coming over for tea tonight...)

any ideas?

    I got this from this community site add your tomatoes to this. I also add many other veggies to this recipe.



    Zucchini Spaghetti (serves 2)

    4 oz Ronzoni Whole Wheat Spaghetti
    4 cups Sliced Zucchini (approximately 16 oz)
    6 Roma Tomatoes
    1/2 cup + 1 Tablespoon Light Italian Dressing

    Cook the spaghetti according to the package instructions. Drain. Drizzle with 1 tablespoon of dressing over the spaghetti and toss to prevent it from sticking.

    In the meantime, place the zucchini and 1/2 cup of dressing in a large skillet with a lid. Steam over medium heat until the zucchini are not quite soft. Add the tomatoes and garlic. Steam an additional 5 minutes.

    Pour the zucchini mixture over the spaghetti.

    insalata caprese. . .I live off of this in the summertime:

    Slice tomatoes
    add fresh mozarella, sliced (can vary the amount)
    add about two tablespoons chopped fresh basil. (incidentally, basil will grow like a weed if you have any room to plant it)
    salt and fresh ground pepper, to taste

    and, drizzle about a tablespoon of the best olive oil you can find over everything.
    (some say to put vinegar on this, but that is sacrilege, according to a good friend of mine, who is from sicily)
