Turkey Bean Chili - High in Protein, Low in Fat, Less than 3

This one is so easy! These are all ingredients that you can find in your pantry or in your fridge. Throw it all in the slow-cooker, go for a run, go to work, go do some running around and come home to a healthy, ready to eat, home-cooked meal! enjoy! =]

Oh, and did I mention that it's less than 300 calories per serving, high in protein, low in fat?!

INGREDIENTS:

30 MINUTES PREP TIME, 2-4 HOURS COOK TIME (DEPENDING ON YOUR CROCK POT)
- 3 cups (cooked) ground extra lean turkey
- 2 1/4 cups kidney beans
- 1 cup chickpeas
- 1 cup kernel corn
- 1 1/4 cup sliced mushrooms
- 1/2 cup chopped onion
- 3 sliced garlice cloves
- 2 tbsp tomato paste
- 1 1/2 cup diced tomatoes
- 1 1/2 cups low sodium tomato juice
- 1 tsp chili powder
- salt & pepper to taste

1. Spray a pan with some Pam or Olive Oil and cook ground turkey before putting in the crock pot.
2. Drain kidney beans and chickpeas. If using canned kernel corn or canned mushrooms, drain those as well.
3. Chop up your garlic and your onion.
4. Put all your ingredients to your crockpot (kidney beans, chickpeas, corn, mushrooms, onion, ground turkey).
5. Add tomato paste.
6. Add diced tomatos.
7. Add tomato juice.
8. Add salt and pepper and preferred seasonings.
9. Stir and let cook for 2-4 hours.
10. Serve and enjoy!!

    Pretty new to MFP, love it so far!

    Thats a great recipe, infact, i just made my own recipe yesterday (while it rained :) ) and the only real difference is i add Kidney beans, bell peppers and 2 Serrano peppers (i like it w/a 'lil kick!).
    next time i will add the corn, i never thopught of that.

    Thanks for this. I made it two nights ago for me an wifey. It's all gone already.

    I found that it needed more liquid so I added:
    extra cup of Turkey (cause it was there)
    another cup of Tomato juice
    1 cup of water.

    More spice: 3 TBS chili powder 2 TBS cayenne pepper.
    1 cup of Ketchup

    Served with low fat shreeded cheese and some low fat sour cream.

    This was fabulous. Making 8 cups servings about 345 calories per cup.

    Alot of carbs from the beans and chickpeas, but very nice all the same.

    I just had a bowl for lunch. Yummo.
