Brio Tuscan Harvest Salad

4 oz grilled chicken, thinly sliced
2 oz Apple wood Bacon, diced 1/4 inch
1 oz ladle Tuscan Italian Dressing
2 1/2 oz Spring Mix Lettuce Mix
1 1/2 oz Spinach
2 Tbsp Spicy Pecans
2 Tbsp Gorgonzola
8 pieces Red Delicious Apple, 1/4 inch slices
2 oz Cremini Mushrooms, sliced
2 oz ladle Tuscan Italian Dressing
1/2 oz Crispy Angel Hair or Tortilla Crisps
1 pinch Salt and Pepper Mix
METHOD:
In a saute pan, combine chicken, bacon and 1 oz of dressing.
Place in oven to heat.
In a mixing bowl, combine all remaining ingredients.
Toss to combine.
When chicken is warmed through, add to mixing bowl.
Toss to combine.
Place in the center of a cold rimless bowl, towering in the center.
*** Note*** I saute the mushrooms as well. I don't use the dressing and it still taste delicious! The heat from the chicken and mushrooms melts the cheese and it is delicious paired with thinly sliced apples. Also, I have used both regular pecans and sugared pecans.
