Just saw this yummy looking recipe on Pintrest today and tried it for dinner. It was SO good and pretty easy. Thought I'd pass it along.
Start with baked potatoes and cut a lid off it, so you can scoop out the insides (leaving some potato, don't scrape it all away). Scoop out the insides and use the guts for something else, like mashed potatoes. Fill the potato about 3/4 full with cheese, bacon, spices to taste, whatever you like. Then crack an egg into it. This should about fill it up, or over fill it, depending on the egg size and potato size and how much you scooped out and how much stuff you put in. Add more cheese, spices and bacon on top.
Bake at 350 for about 20 minutes.
This should give you a nice over easy egg with runny yolk.
I took shortcuts on the bacon and baked potato, microwaving them, so the whole thing took me about 30 minutes, including the baking time.

Definite yum factor. I live in neighboring Washington state and I remember when Idaho had many delish Idaho potato fast food outlets. The Idaho Spud as I recall. The potato is very health friendly. The toppings can be a disaster, as they can be on lettuce.0
