Single serving microwave vanilla cake
I've been craving cake (when I am not) but didn't want to end up blowing 1000 calories on a whole one, so I looked up single serving vanilla cakes... and came across this one.

Ok it's not 'light' by any means, but you can probably shave off some calories by using splenda. Mine turned out about 320 calories, and I was pretty pleasantly surprised (would be 250 with splenda). Much bigger and much better than those horrible 3 2 1 cakes.
1 tbsp butter
3 tbsp milk
1/2 tsp vanilla
1/4 tsp baking powder
4 1/2 tbsp flour (came out to 40g for me)
2 tbsp sugar (I used a bit less... 20g)
Melt butter, mix the rest in, microwave for 1 minute.
