Help (Getting started and understanding the basics)

A little bit of info: I'm 22yrs old, this is my first time trying to lose weight. Most of my teenaged years I weigh 166.6 lbs (seriously, exactly 166.6 for about 5-6 years straight!). Then last year around January to March between school, work and some personal drama I went through I dropped down to 150 lbs. By September of 2013 I was back to my blasted 166.6 lbs. Then I went in for my first depo shot on February 14th and my weight was 180 lbs. My goal is to lose 15-20 pounds by June 30th.(Is this realistic?) I could push that date til October 3rd (When I graduate Nursing school!) but I figure I wanna be in maintenance mode during my last semester in school (July to September) which will be hard enough as it is without trying to diet and lose weight.

I usually burn about 600-800 calories per day during workout. On Fridays I have an 11hr clinical where I'm on my feet 10/11 hours, plus the 500 calories I burn when I run after clinicals. I'm an STNA at a local hospital where I work 12hour night shifts every weekend (I usually burn about 600-800 calories per shift, that's just walking alone, never mind the other activities I gotta do, plus the 400 calories I burn on Saturday and Sunday morning when I run) I usually eat only about 500 calories per day on the weekends because I sleep most of the day away so I could be up all night). Every week day I spend about on average 8-10 hours either studying or in school, where I'm almost always sitting, but I burn 400 in the morning before my day begins and 400 in the evening.

I'm not from the US, I don't eat a lot of American foods, but staple foods from my country are really high in carbs (Rice, beans, yams, cassava, coco-yam...what I believe Americans call Taro root...?)

The last two weeks I've been using MFP to track what I eat. I get the general idea of things to stay away from. I have no problem staying under my caloric goal, matter of fact I'm usually atleast about 1000 calories under since I started (I don't eat back exercise calories) but my problem is staying away from carbs. I could eat a bowl of rice and beans for breakfast and that's usually enough for me for the whole day but talk about carbs! and bananas, they are supposed to be healthy but have 27 grams of carbs in them. Am I just blowing things out of proportion, are these 'healthy' carbs, what's the difference because I was told a carb is a carb.

If you managed to read my whole ramble ^^ I appreciate all the help you can give me. Any tips, tricks, things to do that would help. My goal was to lose 2-3 pounds a week but I barely lost 2 pounds my first week of weigh-in (1.8 to be exact) again...are my goals realistic?

    GO TO iifym.com to get your daily intake, good site for infos as well, watch youtube videos to name a few Team3dmj site, theonlinecoach, biolayne, stevecook_32, robrichesfitness, etc. learn from their vidoes, they talk about nutrition, exercise, anything that will apply to your situation.
