Jacket potato fillings?

If I eat another baked bean or tuna jacket I'm going to scream!

But my incredibly picky son loves cheese and beans jackets, so they go on the menu once a week.

I get on well with chilli (veggie or meat) and cottage cheese, but I'm starting to tire of them too.

Any ideas what to put in them?

I don't like mayonnaise.

    Options
    Try making several "slices" in the jacket potato and rub with garlic/chilli/whatever you like. Once the potato is almost cooked fill the spaces made by the slices with Salami/pepperoni/cooked meat. Add some cheeses ( I like goats cheese) and pop it back in to melt/warm.

    I don't know why I didn't think of hummus, I love it. And goats cheese. Will give them a go.

    Have you tried a Prawn Cocktail Jacket Potato?

    To make the Marie Rose sauce (Low cal and Mayo Free!) I would suggest:

    Ketchup
    Worcestershire Sauce
    Tabasco
    Paprika
    Lemon Juice
    Natural, plain yoghurt
    Prawns and Smoked Salmon Trimmings (Cheaper than regular smoked salmon and totally fit-for-purpose!)

    The above is always nice with a side salad :)

    Alternatively, Have you tried Ham and Feta Cheese? That's a nice combo with a bit of Mustard mixed in :D

    I love the idea of hummus and roasted veggies.

    Also:

    Frank's red hot sauce
    Ranch dressing
    Salsa verde
    Baba ghanoush
    Meat jerky (I like bison)

    I have been making a North Indian hummus from "Vegan Indian Cooking" that contains cooked black lentils, lemon, garlic, cilantro, and hot peppers. It tastes like a cross between a hummus and a baba ghanoush.

    I like to think of them as a healthier vessel for nachos.

    Some things I like to use :
    Chopped grilled chicken
    shredded beef or pork
    Low fat sour cream
    Green onions
    Cheese
    Salsa
    Barbeque sauce
    Jalapenos
    Bacon

    The great thing is that when I use these toppings it's really easy for everyone to customize.
