Homemade waffles - fluffy

Best ever waffles- Found recipe from here http://www.food.com/recipe/the-best-ever-waffles-31750
Yields 6-8
Prep time - 15 mins
Cook time- about 5 mins
(***Nutrition info for 8 as that's how many mine made, but a bigger waffle iron will make less, the website has nutrition for 6).
1 Serving:
Calories: 218 Carbs: 20 Fat: 13 Protein: 5 Sodium:413 Sugar: 1 *Calculated with butter and skim milk, may vary slightly if using margarine or other % fat of milk.
Ingredients:
1 1/3 cups flour
4 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons sugar
2 eggs, separated
1/2 cup butter, melted
1 3/4 cups milk
1 tsp vanilla
1/2 tsp cinnamon
Add: Any fruit toppings, whipped cream, nuts, chocolate chips to the batter or on top after.
Directions:
1. In a large mixing bowl, whisk together all dry ingredients.
2. Separate the eggs, adding the yolks to the dry ingredient mixture, and placing the whites in a small mixing bowl.
3. Beat whites until moderately stiff; set aside. (This helps make the waffles nice and fluffy)
4. Add milk, vanilla and melted butter to dry ingredient mixture and blend.
5. Fold stiff egg whites into mixture.
6.Ladle mixture into hot waffle iron and bake
I used a spray olive oil before each use, even though it's non-stick just to be safe.
For mine I used approximately 1/2 cup of batter in each waffle space, it was pretty runny so don't over-fill it or you might have a bit of a mess. I found even though it seemed quite runny, they still turned out awesome.
I loved this recipe. I think a bit less butter could be used, I used margarine and they were still tasty, but could likely be just as good with a bit less. I also used skim milk which was fine, I'm sure buttermilk would be good to try though!
The waffle maker I used in a 4-in-1 multipurpose grill by Black & Decker, and the heat is one setting. Some waffle makers have different heat settings, so you may need to experiment with it a bit. I'm not sure what the temperature is on mine.
I'll probably try to make the Belgian ice cream sandwiches in the future, yum yum.

I hope they turn out as awesome for you! My boyfriend said they tasted like if waffles and french toast were combined, I think the separating of egg yolks and whites and beating the the egg whites made a huge difference and really added to the fluffiness.0 -
