Slow Cooker Chili Chicken Tacos

Chili Chicken Tacos
Spicy and smokey!

2 lbs. boneless skinless Chicken Thighs

4 Garlic Cloves, minced

1/2 C Salsa, plus more for serving

1-2 TBSP chopped canned Chipotle In Adobo

1 tsp Chili Powder
Salt and Pepper

Combine chicken, garlic, salsa, chipotle, chili powder, salt and pepper in the crockpot. Cook on high for 4 hours or low 6-8 hours. Shred the chicken using two forks and then stir to combine with the juices. You can use this for tacos, enchiladas, lettuce cups, quesadilla’s etc..

  • That sounds yummy! I do the same thing with boneless, skinless chicken breast, a light cooking oil, and taco seasoning. Although, I like the sound of yours, MMMMMM!

    Wow! With dark meat - doesn't dark meat have more fat and calories? I would do with chicken breast - it sure sounds yummy! Did you put into recipe calculator and come up with calories and other data? Remember, we cannot access those recipes that others put in! They say it is coming but not there yet. Thanks for sharing!

  • Yes, I use dark meat! A 4oz. boneless skinless chicken thigh only has 130 calories, better flavor and more moist than the breast.
