Potato Salad

Anyone have a good recipe to share that is somewhat healthy compared to the norm?

    I make "egg salad" (i use tofu instead of eggs) using plain Greek yogurt and a little sour cream. I think you could replace the mayo in potato the same way.

    I don't know about "healthier" but I make a lower calorie dill potato salad. I don't have a specific recipe, I just throw it together. The veggies stretch the potatoes farther and the dressing is sweet and tangy. We like it quite a bit.

    It's roughly:
    6-8 cooked chopped potatoes
    5 large chopped dill pickles
    About a cup of chopped veggies (sweet peppers, celery, green onion)
    Salt and pepper to taste
    Couple chopped boiled eggs, or just whites
    I throw in a can of flaked ham
    Chopped fresh dill

    Dressing:
    About 3/4 cup light miracle whip
    1/4 cup white vinegar
    A few tbsp Dijon mustard
    2 tbsp juice from the dill pickles
    1/4 cup sugar or 5 packets Splenda

    Mix and let sit in the fridge for a couple hours before serving
