Incredibly delicious low cal salad

Hey guys,

Ran across this recipe on Ellie Krieger's site, and I gotta say, I make this at least once a week:

You can have two cups for under 300 calories, and it's *delicious*. I make wraps out of it, eat it as a salad, whatever. I'm really picky about my canned tuna - I think Starkist canned tuna tastes like catfood. ;) If you have a Trader Joe's, I'd advise making the trip and grabbing their brand of canned tuna in water - best tuna I've ever had. I wouldn't change anything about this recipe. It's delicious just the way it is. Let me know what you think!

    sounds wonderful except the diced tomato. I wonder if I could use something like rotelli diced tomatoes and chilis drained instead.

    Jo - I actually just omit the tomatoes sometimes, when I don't feel like 'em. I don't know how well canned would do; I'd say just try omitting them altogether. I often don't have the tomatoes, myself, and it turns out fantastic.

    Now would it still be good without olives and potatoes? I can live the rest of my life without a potato, and olives ... ew. But it otherwise looks awesome. :smile:

    It'd probably still be good minus the potatoes, but the kalamata olives are delicious in it. Adds a definite flavour to it, because of their saltiness. Have you ever had a kalamata olive? :) Way different than say, black ones.
