I'm in school, married with 3 children...doesn't leave much time for cooking their meals AND spending time on my own! I found a great way to cook chicken breast that's yummy and takes little effort......
I put 1 breast in a pan, add low sodium chicken broth and a couple dashes of Mrs. Dash (which comes in MANY flavors!) & cook it until it's done. SO yummy. I add a spinach salad w/low-cal spray dressing and some veggies....very good, very low cals/sodium/fat.0 -
I do a lot of stir-fry dishes... they are my go-to meal. Buy some bags of frozen stir fry veggies and some boneless skinless chicken breasts, and some brown rice. What I do is when I make my brown rice, I make a big batch, and then I take 1-cup servings and package them individually and freeze them. Then, whenever you need a quick meal, cut up a 4 oz boneless skinless chicken breast and cook in a non stick skillet until browned on both sides. Add a bag of veggies and cook until done. Meanwhile, put a portion or two of brown rice in the microwave. You can split this into two meals if you wish, or if you're really hungry, eat it all (with just one portion of rice). If desired, add some teriyaki sauce, some low sodium soy sauce, or some Mrs dash for more flavor.
4 oz chicken breast has 124 calories
The entire package of sir fry veggies averages around 150 calories
1 cup serving of Riceland brand brown rice is 200 calories0 -
I like stir-frys too. Easy to make in bulk (using bags of frozen veggies is so much easier), freeze and use for later. I also like making soups in bulk, and freezing for later. If you have time, you could pre make salads...it took me about an hour to pre-make 6 salads for this week. So I can just grab them and eat them.
3 cups of lettuce, bell peppers, turkey bacon, & cucumbers...and then I just use the spritzer ranch.
But pretty much for me, just making stuff in bulk, and then splitting it into small meals and freezing is the best. You can do this with all kinds of foods.0 -
I always have cooked chicken breast in the fridge. It can be used in sandwiches, salads and main dishes very easily. Something we eat quite often is chicken (or shrimp) with rice and Thai peanut sauce. We only use a tablespoon or two of the sauce so it isn't that bad. Throw in some vegies and you are good to go. Easy to throw in a bowl and take to work.0

I buy a pack of bl/sl chicken breast put them on a baking sheet and use several kinds of Mrs Dash. Then just store in the fridge. you have several different flavors to choice from in a hurry. I love the Fiesta Lime.0

When I was being really good.....I would grill up 6 chicken breasts on Sunday. I have a George Forman, but you can do it in the oven on broil, in the frying pan with Pam or on the outside grill.
I would use Mrs Dash on 2, garlic powder/salt/ pepper on 2, one with spicy New Orleans style blackening seasoning and the other with lemon juice and what ever.
I would keep 2 in the fridge, then freeze the others in individual baggies.
So when I went to work I would have either a big salad to put the chick on, or I would save some veggies from the night before. Broc, cauliflower, summer squash, zucchini.......all 2 min in the microwave and DONE!!
As matter of fact THANK YOU!!0 -
