We're switching to healthier eating. However our refrigerator died and I'm not sure exactly when we can get a new one. We're on a tight (but doable) grocery budget. I need quick, fairly easy meals because cooking usually gets interrupted by one of my girls.
My husband wants to do those boxed Homestyle Bakes until we can get a fridge but I hate how much sodium is in them. All I can think of is beans, rice and a vegetable but I'm afraid that'll get boring and my husband is barely on board with this so I want to keep things interesting. Besides its a struggle to get my toddler to eat beans.

Eggs - you can make scrambled, or omelette, or poached eggs on top of vegetables.
Baked potatoes with a selection of fillings.
Sturdy veg dont need refrigeration - a stir fry with peppers and mushrooms. Add some tinned prawns for protein.0 -
I agree with eggs they are amazing! it sounds horrid but one of my favorite breakfasts is mashed banana with a splash of soya milk and 2 egg whites, makes a sweet breakfast that is very healthy, tasted like dessert! can add berrys etc to your content! Please try

another thing you could do is roast carrots and sweet potatoes very yummy!

And I made an edited version of this recipe last night- about 150 calories per servings if you cut it into 8 servings, and SO. FREAKIN'. DELICIOUS. I just recommend adding a good bit of seasoning into the layers to make the flavors pop. None of the ingredients necessarily need to be refrigerated either!It costs about $1 per serving as I made it.
