body's turnaround time for weighloss and weigh gain

okay, i will articulate this as well as possible.

typically, water weight and waste aside, does your body gain and lose in current time as a surplus or deficit is implemented? Example, if someone goes on vacation and truly over eats for the entire week (let's say they ate an additional 500 calories each day). at the end of the week (if they were to gain) would the scale reflect that pound gain? or would it (could it) be a situation where someone's weight is normal and all of a sudden several days after their vacation the weight is reflected on the scale.

I guess what i am asking is weight gain and weight loss "real" time. can that person who overindulged on their vacation be assured they are "out of the woods" so to speak if they scale didn't reflect an increase after arriving home.
