Want to make refrigerator pickles - but also want to minimize the salt and sugar. Anyone ever make low sodium or sugarless pickles?

Sugarless is easy, as long as you're okay with kosher dill. You would be surprised how little pickling salt is really needed. Two tablespoons for a large Ball jar is very flavorful after sitting for about 7 days in the fridge. Just make sure not to skimp other spices, especially fresh dill and fresh garlic.

I actually just made these tonight: http://allrecipes.com/recipe/refrigerator-dill-pickles/detail.aspx I've made them 3-4 times now. They are very good and you can easily omit the small amount of sugar called for in the recipe.
