The different kinds of fats

First off, let me start by saying that I am NOT worried about fats making me fat. I don't believe in that. I've long learned that I can lose just fine while still consuming said "bad" nutrients.
Anyway, I was curious about the different kinds of fats and current research out there concerning them. Does the kind of fat (unsaturated, saturated, monounsaturated, etc) affect our bodies in significantly positive/negative ways? I remember learning, in my general education nutrition class, that there are societies who live in the arctic that survive off of animal blubber to get themselves through their winters and I'm guessing that they aren't fat or are dying from heart attacks.
