Protein Rhubarb Oatmeal

Hi guys/gals!
I work out in the mornings before work (weight lifting plus minimal cardio), and I just wanted to share this awesome post-workout breakfast that I eat. It feels like I am eating a dessert
Ingredients:
Rhubarb, chopped into ½ inch pieces (I bought mine already chopped/frozen as it is not rhubarb season quite yet.)
Protein Powder of your choice (I used chocolate flavoured)
Pumpkin Pie Spice
Almonds (or other nut of your choice)
Quick Oats (dry)
Directions:
(I make this the night before I eat it so that all the flavours get to know each other)
Bring the rhubarb to a boil in a saucepan (you might want to add some water in the saucepan if using fresh rhubarb when you start- I didn’t as my rhubarb was frozen so water was already in the pieces as it thawed). Reduce to a simmer. Add in pumpkin pie spice. Cover with lid. An hour is best to let it simmer (you want the rhubarb to get super soft/stew like)
Once cooked at preferred texture, pour desired amount of rhubarb in a container (I used about 300 grams cooked)
Add in a scoop of protein powder (my scoop was 30g), desired amount of dry quick oats (I used 15 g) and desired amount of almonds or other nuts (I used 10 g)
Stir until mixed well. Put in fridge until ready to eat. (you can make many containers at the same time. I do, and have breakfast ready for the week) Time = saved.
My variation comes out to 291 calories, with 28 carbs, 7 grams of fat and 31 grams of protein. Very filling. It tastes like I am eating rhubarb crisp! (sort of LOL)
You could mix it up and add fruit with the rhubarb (strawberries...yummy).
