super starchy apple

this year our crop of apples is very starchy. three things:

- does anyone know why this occurred? (perhaps we harvested them too late or too early)
- does this affect the calorie count? (they are sweeter than normal)
- will i need to adjust my applesauce recipe to account for the starchiness? (does it affect the consistency?)

I don't know the answers, but I do know a local apple farm near me had a very shortened season this year.
