If you are looking for an outrageously tasty meatloaf, Emeril has your number.

    Enjoy!

NOTE: You can substitute some healthier ingredients without compromising the flavor.

Look up Nom Nom Paleo's Porktastastic Meatloaf. I can't at work for you, it is blocked (anything recipe/restaurant related is blocked..boo!). BEST meatloaf I have had in a long time. And do not be scared of the ingredients list. Everything is actually easy to find/use. The recipe itself is very easy, too.

My own (an Italian version). I also don't really measure anything so these are all estimates aside from the beef and eggs:

    1# ground beef
    2 eggs
    1 cup bread crumbs
    3/4 cup tomato sauce
    Parsley
    Garlic salt
    Pepper
    1 cup shredded mozzarella

Smash the first 7 items together. Once mixed, transfer to whatever you're baking it in and form into a loaf. Make a well down the middle, put the cheese in it, and fold the meat over it to encase the cheese. Bake at 350 for an hour.

So I have a new favorite topper for my meatloaf, sriracha hot chili sauce. I mix a bit up in whatever I’m going with that particular time and then I put a heaping coating all over it. In fact I’ve gotten to where sriracha is my favorite condiment, hotdogs, fries, hamburgers, you name it I’ll try it on it.

    pancake syrup

1 pound of lean beef or turkey
    1 egg white
    1/2 cup of quinoa
    1 tsp garlic
    Onion
    Salt/Pepper (or garlic salt)
    Any other spices you like

I add all the ingredients and separate them into 4 oz balls. My meatloaf is more like giant meat balls. That way I have a good idea of how many calories are in it. I switched bread crumbs/flour for quinoa. Works decently well.

I make half the recipe all the time.

    All American Meatloaf
    http://soupspiceeverythingnice.blogspot.com/2014/02/all-american-meatloaf.html
    Serves 6 to 8

    Ingredients

2 lbs lean ground beef (93% lean)
3/4 cup uncooked quick cooking oats
    1 small/medium onion, finely chopped
    1/2 cup ketchup
    1/4 cup 2% milk
    2 large eggs, lightly beaten
    1 teaspoon salt
    1/2 teaspoon pepper

    Topping:
    1/2 cup ketchup
    2 tsp. prepared mustard
    1-1/2 Tbsp. brown sugar

    Directions

    Preheat oven to 350 degrees.

Combine meat, oatmeal, onion, egg, 1/2 cup ketchup, milk, salt and pepper in large bowl; shape into 2 loaves in 9” x 9” pan. Bake at 350 for 40 minutes. Combine topping ingredients and spoon over meat loaf, bake 15 more minutes. Let stand a few minutes before slicing.

These recipes sound really good! 2 questions:
    1. How do you make gravy for meatloaf?
    2. How do you make a meal out of meatloaf (like what else do you eat it with to keep it healthy and not all meat)?

    Thanks!

No Idea for question 1. Mine is always so moist that I never need a gravy.
But for #2: I usually serve a giant Green Bean Casserole (easy on the soup) and some Mashed Potatoes or Potatoes au Gratin

    Delicious turkey meatloaf recipe:

1.25lb extra lean ground turkey (I use Jennie O)
    1/2 onion, grated or chopped
    1/2 cup skim milk
    1/2 cup panko bread crumbs
    2 cloves garlic
    1T worcestershire sauce
    3T parsley
    1 egg
    1t salt
    2 Tablespoons bbq sauce
    2 Tablespoons ketchup
    Cooking spray

Preheat oven to 350. Mix together breadcrumbs and milk and let soak while you mix together the remaining ingredients except bbq sauce and ketchup. Add breadcrumb/milk mixture once thoroughly soaked to meat . Form into loaf and add to sprayed pan. Mix bbq sauce and ketchup on top of meatloaf and cook for an hour. I serve with mashed potatoes and a green vegetable.

I don't need anything with mine either... it's very moist. I typically make mashed potatoes and some veggies, or mashed cauliflower.
