Baked oatmeal clafoutis

This is delicious!

250 grams (2 1/2 cups) quick cooking or old-fashioned oats, uncooked (use certified gluten-free oats to make this gluten-free)
1/2 cup splenda
1 teaspoon ground cinnamon
1/2 teaspoon fine sea salt
2 large eggs
1 medium apple, peeled and thinly sliced, or grated
800 ml (3 1/3 cups) milk (use non-dairy to make this vegan)
1 tablespoon pure vanilla extract

Mix dry ingredients, add eggs and wet ingredients, mixing well. You can grate the apples and mix them as well, or slice them and put them on top. Grease a 8x8 dish and bake at 360 degrees for 45 minutes, let it cool and cut in bars. Keeps in the fridge.

You can add nuts, dried fruit, heck use other fruit if you want.

Calories for 6 bars (pretty big) with 2% milk are 255 calories, 37g carb, 7g fat, 12g protein

    I would probably add more apples next time, but they tend to float to the top anyway, and reduce the splenda.
