Eating for health

First, let me say that I do understand that a calorie deficit is all that's required to lose weight. I am doing that and proving it right.

I am trying to sort through the information, though, to determine some other factors.

I see that "eating fat" does not make one fat. Eating cholesterol does not elevate blood cholesterol. Sodium does not cause high blood pressure. Carbs/sugar are not evil. (Thank goodness because I do love me some carbs!)

However...

What does cause these issues in healthy weight people? Obesity contributes and those who are heavy are more likely to have these issues but it isn't exclusive to those who are overweight. I know that genetics are a factor but, surely, they aren't the only factor.

I know how to eat to lose weight. I am trying to figure out how to eat for health, as well. (Please leave the pseudoscience at the door. I am seeking actual peer reviewed, well tested theories) Does anyone have articles or information they would share?

    Genetics will be the main driver for a person at a healthy weight who may be suffering from high cholesterol, high bp, etc. And yes diet will dictate it too. Some people don't really balance out how they eat. Lack of micro nutrients even though calorie count is fine, will definitely make a difference since some of the micros are driving forces for essential health.
    There's also other factors as rest, stress, environmental, and risk behavior.
