Is having a V8 juice drink an acceptable way to have veggies while I increase my intake of veggies per day? I'm not the biggest veggie lover.

If you don't like vegetables, I don't see why you should have to eat them. You might try experimenting with different kinds though, there are a lot of them out there! I have always hated celery, but I love carrots, cucumber, and tomato.
I like V8 juice, and I don't think there is anything wrong with it, but I wouldn't really drink it just to increase my veggie intake.0 -
It has a lot of sodium in it (unless you get the Low Sodium variety) so you have to watch that. Also, you won't be getting nearly the amount of fiber as you would by eating actual veggies. That said, I'm a huge fan of Spicy-Hot V8, and drink it occasionally. I don't think of it as a substitute for vegetables though. More like an addition.
I know that doesn't answer your actual question, lol. Sorry. Just sharing thoughts.0 -
V8 will increase your veggie intake but it is also VERY high in sodium (even the low-sodium version) so don't drink a ton!0

Everything has a trade-off. If the higher sodium and lost fiber fit into your overall plan, go for it. My personal plan includes giving up all forms of prepared fruit/veggie juice. I'd rather have my fruit/veggie calories be from the whole fruit/veggie complete with the fiber and nothing else added.0

It's great for your micros especially if you have a hard time eating a lot of veggies. You don't have to worry about the sodium unless you have a medical reason to avoid it, just beware that it could cause you to retain some water weight.0
