Parsley Sauce 80 cals 6g fat 5g carbs 2g protein
The macros aren't so hot on this one, but it tastes pretty darn good. I made it tonight for my salmon - but it was wonderful with steamed broccoli.
2 tbsp unsalted butter
2 tbsp flour
1/2 c milk (I used 2% low fat)
1/2 tsp ground nutmeg
10 grams finely chopped fresh parsley
salt & pepper
Melt butter in sauce pan over low heat. Stir in flour to make a roux.
Slowly temper in milk stirring constantly until mixture thickens, then add nutmeg.
Add parsley last. Stir until just combined.
Salt & pepper to taste.
Makes 4 generous servings. Works well with salmon and broccoli.
