Beginning week six - ugh

Shopped yesterday and bought a lot of vegetables, ate four different kinds already tonight, broiled them, but let them stay in alittle to long. Ate anyway, can you cook out the nutrients with broiling?

    I usually bake asparagus on a cookie sheet with some olive oil and salt and pepper and cook zucchini in a pan on the stove with the same... I haven't ventured to many other veggies yet besides salad ingredients. I'm not sure how the nutrients are affected by different types of cooking methods either but would be interested to learn.

    I'm gonna try to find out, my daughter and family are on a whole food organic diet, he's a great personal trainer, and she cooks hers in the oven. I ask him next time I see or talk to them

    I think the only cooking method that has a significant effect on vegies is boiling, because a lot of the nutrients leach out into the water. I think steaming, baking or grilling/broiling them doesn't really change the make up.
