Honey Chipotle Salmon

This super simple salmon dish.
Honey Chipotle Salmon
Servings: 4
Serving Size: 4 oz.
Nutritional Information: 225 calories, 12g of fat, 6.5g of carbohydrates, 0g of fiber, 22.5g of protein, 6.5g of sugar
Weight Watchers® PointsPlus®: 5 *
Ingredients
1 lb. salmon fillet, skinless
1.5 tbsp. honey
1.5 tbsp. chipotle peppers, pureed or minced
1 tbsp. lime juice
Instructions
Preheat grill to medium high heat. Alternatively preheat the oven to 500 degrees.
Stir together the honey, chipotle puree, and lime juice.
Place the salmon on a heavy piece of foil. Season with salt and pepper. Brush the salmon with the chipotle and honey glaze.
Place on the grill and close. Cook for 8-10 minutes until salmon is cooked through and flaky. For oven cooking, cook for 8-10 minutes and broil for last minute for a caramelized top.
Mango Salsa: I served my salmon with a quick mango salsa made with 1 mango, 1/2 avocado, 1/4 cup cilantro, red onion, lime juice, salt, pepper, and a touch of cumin.

it looks yummy and I bet it would taste great with that plain brown rice that other girl's asking for suggestions with.
It's a recipe I can remember so easy and I can easily make any amount just use equal parts chile and honey and a little over half the amount of lime juice. That's why I like recipes like this where the ingredients are equal parts. They are easy to eyeball with any other container if you can't find that pesky measuring spoon.0 -

That would be great with the rice.. My husband is not a huge fan of salmon LOVES this recipe. I like it because it is so easy to prepare? I think next I will try with chicken. Hope you enjoy..0
