Doing something wrong? Or too early to tell?

Hey guys, I know this sounds silly but I'm wondering if I'm doing something wrong or stupid. I've done MFP 3 times before to loose weight but always have to stop for one reason or another (aka excuses) and I've never encountered this when starting back up. Normally I can start loosing pretty quickly right from the get go by eating better but I'm attempting to do two things different this time. 1.) Not push myself too hard since I always manage to take on too much and either get overwhelmed or injure myself. And 2.) I'm starting at a much higher weight than I ever have before. Currently I'm 245.4lbs whereas every time I've tried before I've been around 180-190lbs.
Now my issue is that over the past week that I've been watching my weight I haven't seen the scale budge at all. I'm trying to get in more water but I will admit I'm not were I should be on my water intake. I'm also working slowly on trying to recondition myself to get into more strenuous exercise so I'm not working quite as hard as I usually do but my lungs do burn and I can feel my muscles twitching when I'm done so I feel like this is where my body is at condition wise.
Also to add in I'm coming out of a long period of time of not having food to eat (ie one meal a day or every other day) since I've not been able to afford it before recently. I don't know if this is my body getting acclimated to eating regular meals again with real food (just ate my first grapefruit in a couple months - omg ) or if I'm holding in water weight. I guess I'm just looking for reassurance that this is normal and that I'm not doing anything wrong or making a stupid mistake because I'm trying really hard and don't want to half *kitten* this like I have before.

Go see a nutritionist and have your BMR calculated. Your metabolism might be shot from starving yourself for so long. I mean, if you really got up to 245 pounds by eating sometimes once every other day... something is VERY wrong.0

I agree somethings wrong but if I'm just starting to be able to affording food for myself logically I'm not going to be able to afford to go see a nutritionist. =[0

Your metabolism may have slowed while you were eating so little but a week isn't enough time to know that. Keep making healthy choices and getting some exercise, log everything you eat and measure it if at all possible. (Guessing isn't very accurate when you are trying to pin point a problem.)0

The problem is that "watching your weight" doesn't actually make you lose weight. Calculate how many calories you need to eat to lose weight. You are not in starvation mode and nothing is wrong. There is no such thing as real food. All food is food.0
