Weight training and nutrition help please?

Start weight training. Even though I want to get really toned and fit is till have fat to loose. Really struggling with the nutrition sides of things and just can't think of any meals to put together. Got a few ideas for breakfast but am struggling for the rest of the day. I'm currently 74kgs and would ideally like to be around 60-63kgs.

Anyone have any ideas of high protein meals. High protein low carb would be even better??
Lastly, someone advised me on my goals to be set at carbs 40%, fat 30% and protein 30% and cals 1,800 should I change any of these goals. I am following the 5x5 programme and doing cardio on days off in terms of fitness. Thanks :)
