I need low calorie healthy recipes for zuchinni, summer squash, okra and here's the tricky one-amaranth greens.
My amaranth is growing by the minute into huge, read dinosaur plants that seem to glow with fluorescent color.
I may need some amaranth grain recipes soon, too. I have a lot of Swiss chard that we use for stir-fried greens with eggs at breakfast. Would like dinner recipes with some more variety that include amaranth ideas. Recipes that I'm finding are crazy fattening. Things like lasagna, Indian cuisine( how do they stay thin?) and "spinach" dips.
And oh, basil recipes besides pesto. Recipes that don't blow my calorie count.
I'm dehydrating zuchinni soaked in red wine vinegar as chips but my dehydrator can't keep up with production!
The chips are an awesome snack, btw.

    Here's one for the squash you have, I've made this for years during the summer. So light and delicious and makes a great side dish or toss it over pasta. Amazing:

    Tomorrow night I'm making chicken enchilada zuchinni boats.

    I used to make a lot of jerky when I lived in the country and raised cattle. Now, not so much. However, I do make a ton of liver jerky for our dogs and cats. They are totally addicted! I slice the liver ( pork liver is easier) in about 1/4 inch slices and put them on the dryer at 165 degrees. I check it every few hours and it takes about 8 hours, usually.
    My one problem is keeping some things from sticking. I may try parchment paper and see how it works.
    We are moving to NC in July. A 2,400 mile drive with 3 trucks/trailers, a horse, 2 dogs and 3 cats. I'd like to dehydrate a bunch of fruits and veggies to eat as snack foods. Maybe jerky for protein snacks would be a good idea,too.
    Has anybody ever dried okra? I've bought those oily, fried okra chips in the grocery store. They are delicious and I'd like to make a fat free version. I also can, freeze and make fermented pickles. Just made garlic chive kimchi. My husband makes a fermented hot sauce and uses it to make an awesome salsa with a much longer storage ability. (Refrigerated). Also, he purees and strains the hot sauce, thins with vinegar for homemade tobasco.
    Unfortunately, it would be hard to move with hundreds of jars of canned food. Which is okay. It's forcing me to eat more veggies and experiment with the dehydrator. I'm also giving away quite a few squash, some greens and peppers.

    I had so much zucchini in the garden the last couple years, I'm skipping it this yr. But these were my fave ways to use them: fritters (served with plain yogurt and apricot jam), egg foo young, brownies, muffins, and noodles (be sure to press out excess moisture).
    I did try to make chips in my dehydrator but wasn't a fan.
