Wheat free diets

After years of suffering terrible stomach pains and bloating I had tests at the doctors who advised I wasn't coeliac so starting eating bread and pasta again. After the pains started to get much worse, a few days ago I decided to cut out bread/pasta etc after reading an article in a magazine, and I already feel less bloat but feeling tired now.
My question is to those who are on a wheat free diet, is the tiredness temporary until my body gets rid of the toxins from wheat? And also is it as simple as just eating fresh meat, fish and vegetables?
I just want the pains to stop and the bloating/muffin top to disappear!
Any advice would be appreciated x
